Irish Soda Bread

In large bowl mix ingredients in order.

  • 2 3/4 Cups     Blanched Almond Flour
  • 1/4 t.                Salt
  • 1 1/2 t.              Baking Soda
  • 2 T.                  Apple Cider Vinegar
  • 2 T.                  Agave Nectar or Honey
  • 2                      Eggs
  • 1/2 Cup           Cranraisins, Dried Dates or Raisins

Place dough on parchment paper or foil & form large flat circle (8-9" across).

Bake at 350 degrees for 20 minutes.

Score into 8 pieces, like a pizza, with knife.

Cool & store in a large zip lock bag.

DAD’S FAMOUS PUMPKIN BARS

(MADE BY MOM - But not mine)

PRE-HEAT OVEN TO 350 DEGREES
15X10 JELLY ROLL PAN, GREASED (NO FLOUR)

WET INGREDIENTS

IN LARGE BOWL COMBINE:
2 C. SUGAR
1/2 C. OIL
4 EGGS
1 CAN PUMPKIN (PLAIN 14-16oz CAN)
2 TSP. CINNAMON (CAN SUB. PUMPKIN PIE SPICE ALSO)

DRY INGREDIENTS:

2 CUPS BISQUICK (IF OUT OF BISQUICK PANCAKE MIX CAN BE SUBSTITUTED)
1/2 TO 3/4 CUP NUTS (OPTIONAL) WALNUT OR PECAN

MIX WET INGREDIENTS UNTIL WELL BLENDED W/HAND MIXER OR STAND MIXER~ ABOUT 2 MINS.

ADD BISQUICK TO WET MIXTURE. MIX ON LOW UNTIL JUST BLENDED. THEN MIX ON MEDIUM FOR ABOUT 2 MINUTES UNTIL ONLY LITTLE LUMPS OF BISQUICK SHOW. FOLD IN NUTS.

POUR INTO GREASED JELLY ROLL PAN.
BAKE 25-30 MINUTES. TEST WITH TOOTHPICK. COOL COMPLETELY BEFORE FROSTING. IT IS BEST IF BARS CAN SIT OVER NIGHT AND BE FROSTED JUST BEFORE SERVING.

Brownie Sundae Cheesecake

Serves: 10 or so
Cook Time: 55 Min

Ingredients

  • 1 bx brownie mixed and baked according to directions

CHOCOLATE CRUST
* 1 1/2 c crushed vanilla wafer(about 45 cookies)
* 6 Tbsp powdered sugar
* 6 Tbsp cocoa powder
* 1 stk butter melted

CHEESECAKE
* 4(8oz) pkg cream cheese, room temperature
* 1 c sugar
* 4 eggs
* choclate sundae syrups in a bottle..or any kind

This has all the stuff in it l love. Brownies , cheesecake and chocolate!!! WOW!!!

Directions

  1. Make brownies and allow to cool
  2. Preheat oven to 350
    Mix crust ingredients..press mixture into a 9 inch springform pan. bake 8 min and allow to cool slightly
  3. Beat cream cheese, sugar and vanilla. Gradually add eggs one at a time. Pour batter into crust.
  4. Cube up about half the pan of brownies. sprinkle the pieces into the batter and push them down. Drizzle chocolate sundae syrup on top and with a butter knife swirl gently to give it the marble effect.
  5. Bake 50-55 min
  6. Lossen from pan after cooled. Cover and refrigerate.
    Better served cold

Chile Relleno Casserole

Ingredients:

  • (2) 7 oz. Cans green chilies, drained & sliced lengthwise in hal.
  • 1# Cheddar - grated
  • 1/2 # Jack - grated
  • 4 or 5 eggs
  • one can evaporated milk

Optional:

  • Small can sliced olives - drained
  • Small can of sliced mushrooms - drained (yuck!)
  • 1# Ground beef - cooked & drained

Directions:

  1. Combine optional ingredients. Combine cheeses.
  2. Layer chilies, cheeses & optional ingredients. (2 layers)
  3. Mix eggs & milk. Pour over layers.
  4. Bake at 375 degrees for 45-60 minutes. Top should be brown, let set before serving.
